The mass closure of the hospitality industry has forced many hospitality operators to rethink their menus and service offer, making changes on site, like minimising shared touch points, utilising outside dining areas and serving a wider range of dishes for takeout or home delivery. The effects of global warming from climate change and the impact of plastic waste in the oceans has formed a backdrop for a number of government-led initiatives and proposed legislation on sustainability.
