Using disposable paper towels can reduce the risk of spreading bacteria
Disposable paper towels are an ideal hand drying method because they absorb water quickly and are not touched by multiple users. Paper towels should ideally be kept in a dry area where they are not at risk of becoming damp, which could increase bacteria growth.
Often, when using hot air dryers in food preparation areas, users do not completely dry their hands. Leaving hands damp can promote bacterial growth. Users who become impatient whilst drying their hands with a hot air dryer and use their work garments to finish the task – are also at risk of spreading germs via their clothing.

The importance of washing and drying hands thoroughly
The most basic and important tool in preventing the spread of infection in a catering and hospitality environment is washing your hands. Hand washing is essential before eating, after using the toilet and especially before preparing food.
Although using hand soap is extremely important for proper hand washing, the way that hands are washed will also make a difference. The most important hand washing technique is to thoroughly wash and completely dry both hands. It takes at least 30 seconds to wash hands properly, from when the tap is turned on until hands are completely dry.
In foodservice environments it is important to always follow the recommended hand washing techniques as this will prevent harmful bacteria from being spread onto food.
