A study of over 200 chefs, completed by Enigma Project, revealed a third of chefs had worked in kitchens which served meat which is no longer fresh, or is spoiled.
One of the main ways to prevent meat from being spoiled is by making sure that your refrigerator and freezer has the correct temperature, particularly when it’s situated in hot working kitchens.
For a refrigerator, the recommended temperature is between 3℃ and 5℃, as at this temperature it slows bacterial growth and maintains quality of the food inside. A lower temperature could cause freezing in the fridge, which might lead to spoilage of the food.
If a refrigerator has a temperature higher than 5℃ then it is considered to be in the ‘danger zone‘. The reason it is called the ’danger zone‘ is because food stored above 5℃ causes harmful bacterium to spread quickly and can lead to E. coli, salmonella or listeria.
For a freezer, the ideal temperature is -18℃. Freezing foods such as meat and seafood will stop any bacteria forming, allowing you to store the food for up to 1 year. However, freezing at a lower temperature than -18℃ can cause food, particularly meat and poultry, to lose its texture and flavour.
Either a refrigerator or freezer not set at the correct temperature consistently, can lead to food waste. According to a study by supermarket chain Sainsbury’s, British households throw away seven million tonnes of food waste every year — the equivalent of six meals a week.
