In-vogue beverages 2018 – Kombucha fermented drink

Fermented food and drink has soared in popularity thanks to the increasing interest and research into good gut health. One cold drink, called Kombucha (fermented tea), has gained particularly good press as a home remedy for acne, fatigue, hypertension and headaches.

Kombucha is described as a living-health drink, made by fermenting tea and sugar with scoby (a Kombucha culture), the result is something between sparkling apple cider and champagne, depending on what kind of tea you use. During the fermentation process fruits such as strawberry, watermelon, ginger and blueberry can be added to Kombucha to create unique flavour variations.

According to the latest report from research firm MarketsandMarkets, the Kombucha market is poised for huge growth by 2020, growing 25 per cent each year. Virginia Lee, Senior Beverage Analyst at Euromonitor International said, ‘The reason why health drinks such as Kombucha have risen in popularity is because they can help consumers live a healthier lifestyle.’

Healthy eating blog ‘healthyish’ says that kombucha can be used as a base for cocktails, some of their favourites include, vodka highball (kombucha, vodka, sugar and ginger ale), Swedish tart (vodka, dill syrup and green tea kombucha) and Rosy gin (gin, rose water, kombucha and grenadine).

In London, you can try kombucha at an outdoor bar called ‘Jarr Kombucha’, based in Hackney Wick. Here they serve the drink in various flavours and as cocktails – and they’re also supplying supermarkets across the UK.
