In a 2-page PDF launched this week, Bunzl Catering Supplies is presenting its range of Cleanline and Cleanline Eco foodsafe cleaner-sanitisers designed to reduce the risk of cross-contamination in a hospitality and catering operation. The range includes the ‘Cleanline Catering Cleaner & Sanitiser’, a multi-purpose fragrance-free cleaner suitable for use on most hard surfaces in kitchens and food preparation areas, that kills 99.999% of the most common forms of bacteria and certified against MRSA, E.coli and Salmonella.
Cross-contamination happens when bacteria and microorganisms are passed from one type of food to another. Commercial kitchens are particularly at risk of this happening because raw meat and cooked food are often prepared on the same work surfaces. This means that harmful live organisms can be unknowingly transferred directly from raw meats to cooked food or onto a chopping board or prep surface. Bacteria and germs can also arrive on dirty hands, deliveries, packaging, pests, and clothing. Once established they will rapidly multiply if surfaces are not properly cleaned and sanitised.
Disinfectants kill bugs on already clean surfaces, but sanitisers can be used to both clean and disinfect as part of a two-stage approach. First stage, use the Cleanline sanitiser to clean the surface, removing any dirt, food, and grease. Second stage, re-apply the sanitiser to the visibly clean surface and leave for the required time to disinfect the surface.
The agency who advise the foodservice industry on this procedure are the Food Standards Agency (FSA). They advise on a variety of different hygiene procedures required in any industry concerned with food. In 2011, the board of the FSA decided that in order to make safe practise absolutely clear they would produce a guideline that demands cleaning of food prep surfaces and sanitising them as two separate operations. This has become known as the two-stage clean and is now an industry standard practice enforced and policed mainly by Environmental Health Officers throughout the UK.
